Mayport Shrimp and Grits
Ingredients
- 2 cups reduced-sodium chicken broth
- 2 cups 2% milk
- 1/3 cup butter, cubed
- 3/4 teaspoon salt
- 1/2 teaspoon pepper
- 3/4 cup uncooked old-fashioned grits
- 1 cup shredded cheddar cheese
- Mayport Shrimp
- 8 thick-sliced bacon strips, chopped
- 1 pound uncooked medium shrimp, peeled and deveined
- 3 garlic cloves, minced
- 1 teaspoon Cajun or blackened seasoning
- 4 green onions, chopped
RECIPE PREPARATION
In a large saucepan, bring the broth, milk, butter, salt and pepper to a boil. Slowly stir in grits. Reduce heat. Cover and cook for 12-14 minutes or until thickened, stirring occasionally. Stir in cheese until melted. Set aside and keep warm. In a separate large skillet, cook bacon over medium heat until crisp. Remove to paper towels with a slotted spoon; drain, reserving 4 teaspoons drippings. Saute the shrimp, garlic and seasoning in drippings until shrimp turn pink. Serve with grits and sprinkle with onions.

COWBOY CHILI
Ingredients
- 2 pounds 80/20 ground beef
- 1 medium onion diced
- 1 large green bell pepper diced
- 2 teaspoons minced garlic
- 1 (15.5 ounce) can pinto beans, rinsed and drained
- 1 (15.5 ounce) can dark red kidney beans, rinsed and drained
- 3 (14.5-ounce) cans diced tomatoes
- 1 (1.25 ounce) package chili seasoning mix
- 2 tablespoons chili powder
- 2 (14.4 ounce) cans beef broth
- Salt and pepper to taste
RECIPE PREPARATION
To prepare Cowboy Chili, start by adding the ground beef to a stock pot and cook it over medium heat until it is no longer pink, which should take about eight minutes. Once cooked, use a slotted spoon to strain the beef from the pot and set it aside. Drain all but about one tablespoon of the grease from the pot. Next, add the diced onion and green bell pepper, and sauté the vegetables until they are tender, which should take about 8-10 minutes. Add the minced garlic and sauté for an additional 30 seconds. Return the ground beef to the pot and add the pinto beans, kidney beans, diced tomatoes with their juice, chili seasoning mix, chili powder, and beef broth. Stir until everything is well combined, then bring the broth to a boil. Cover the pot and reduce the heat to medium-low, allowing the chili to simmer for two hours while stirring occasionally. Finally, season with salt and pepper to taste. Serve the Cowboy Chili hot with your choice of toppings.
